I bought a small collection of unique Olive Oils and Balsamic Vinegars

They are divine.

Olive Oils:
Herbes de Provence
Harissa
Baklouti Green Chile Pepper

Balsamic Vinegars:
Neapolitan Herb
BlackBerry Ginger
Espresso

A couple of things I've tried:

Harissa + Espresso dip with lightly toasted, homemade croutons.
BlackBerry Ginger on Vanilla Ice Cream (to die for)

Personally, I like a deep, thick, dark, rich, extra virgin olive oil for bread dipping and hummus. A lighter oil is good for salads and cooking/frying. I don't do flavored oils: I'd rather use spices, instead. Fresh parsley, garlic, and basil with cumin, paprika, and red peppers goes good with pretty much anything.

That sounds delicious. I tend to like savory, herby combos with crusty bread. :)
